In a large bowl, combine the cassava flour, salt, cayenne pepper, and cubed cold butter. Using your fingertips, rub the ingredients together until the mixture resembles coarse crumbs. (5 minutes)

Drizzle in the cold milk, gradually incorporating it into the mixture while continuing to rub and mix with your hands. The goal is to achieve a texture that resembles small pebbles, moist enough to clump together when squeezed. Add more milk if necessary to reach this consistency. (3 minutes)

Place a small (6-inch) dry, nonstick pan over medium-high heat. Allow the pan to heat up until hot. (2 minutes)

Transfer a heaping 1/2 cup of the cassava mixture into the hot pan, ensuring it's enough to cover the bottom in a layer about 1/4 to 1/2 inch deep. Gently press the top of the mixture to settle it. Use a spatula to press any loose crumbs back into the forming flatbread, ensuring even distribution and cohesion. (1 minute)

Cover the pan and cook until the bottom of the flatbread is golden brown and a crust has formed. You should be able to slide a spatula underneath it without it falling apart. (3 minutes)

Carefully flip the flatbread. You can do this by either tossing the pan slightly while using the spatula to flip, or by placing a plate over the pan, inverting the flatbread onto the plate, and then sliding it back into the pan. (1 minute)

Cook the other side until it achieves a beautiful golden-brown color. (3 to 4 minutes)

Remove the Mbeju from the heat and allow it to rest for a couple of minutes before serving warm.

For an extra layer of flavor, try using smoked paprika instead of cayenne pepper.
Mbeju is traditionally served with melted butter and coffee, but feel free to experiment with toppings like chipotle mayo, avocado, roasted peppers, green onions, or a sprinkle of coarse salt.
Use freshly grated cheese for the best melting and flavor.
