Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). (5 minutes)

02

Step

Using a small knife, pierce the skin of the butternut squash several times. Place the squash cut-side down in a baking dish and add enough water to reach a depth of approximately ½ inch. Cover the dish tightly with aluminum foil. (5 minutes)

03

Step

Bake in the preheated oven until the squash is very tender and easily pierced with a fork, about 1 hour. (60 minutes)

04

Step

Carefully scoop the cooked squash flesh into a large bowl. Add the ¾ cup sour cream, butter, brown sugar, and cinnamon. Season generously with salt and pepper. (5 minutes)

05

Step

Mash the mixture with a potato masher or fork until completely smooth and creamy. For an extra-silky texture, use an immersion blender. (5 minutes)

06

Step

If desired, garnish with fresh parsley and a dollop of sour cream before serving. (2 minutes)

For enhanced flavor, roast a few cloves of garlic alongside the squash and mash them in.
If you prefer a sweeter dish, add an extra tablespoon of brown sugar or a drizzle of maple syrup.
The mashed butternut squash can be prepared ahead of time and reheated gently before serving. Store in an airtight container in the refrigerator for up to 3 days.
