A vibrant and refreshing salad bursting with summer flavors! Crisp green beans mingle with sweet corn, hearty black beans, and a medley of fresh vegetables, all bathed in a tangy-sweet vinaigrette. Perfect as a side dish or a light lunch.

Follow The Directions

Bring water to a boil in a medium saucepan. (2 minutes)

Add green beans and cook until just crisp-tender. (4-5 minutes)

Drain the green beans immediately and rinse with cold water to stop the cooking process. (1 minute)

Transfer the cooled green beans to a large bowl.

Add the corn, black beans, diced tomatoes (with juice), celery, bell pepper, and onion to the bowl with the green beans.

In a separate small bowl, whisk together the distilled vinegar, sugar, olive oil, salt, and pepper until the sugar is dissolved.

Pour the vinaigrette over the vegetables and stir gently to coat everything evenly.

Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld. (4 hours+)

For a spicier kick, add a pinch of red pepper flakes to the vinaigrette.
Feel free to substitute other vegetables, such as chopped cucumber, red bell pepper, or shredded carrots.
If you don't have distilled vinegar, apple cider vinegar or white wine vinegar can be used as substitutes.
For a brighter flavor, add a tablespoon of fresh lemon juice to the dressing.
This salad is even better the next day as the flavors continue to develop.
