Follow The Directions

01

Step

Preheat the oven to 350 degrees F (175 degrees C).

02

Step

In a small bowl, combine the Cheddar cheese and 1/2 cup Parmesan cheese. Set aside.

03

Step

Prepare the broccoli: Place a steamer insert into a saucepan and fill with water just below the steamer's bottom. Bring to a boil, add broccoli, cover, and steam until tender-crisp, about 2-6 minutes.

04

Step

While the broccoli steams, melt butter in a large skillet over medium heat. Add mushrooms, onion, and garlic. Sauté until softened, about 5-7 minutes, releasing their earthy aromas.

05

Step

In a large bowl, whisk together the condensed soup, sour cream, milk, and mayonnaise until smooth. Stir in 1/2 cup of the Cheddar-Parmesan mixture. Season generously with salt and pepper. Add the sautéed vegetables and stir to combine the sauce.

06

Step

Begin layering: Spread 1/2 cup of the cheese-vegetable sauce onto the bottom of a 9x13-inch casserole dish. Add the cooked rice in an even layer. Follow with the steamed broccoli, then top with a layer of shredded cooked chicken. Cover with the remaining cheese-vegetable sauce, patting it down gently and smoothing with a spatula.

07

Step

Bake in the preheated oven for 30 minutes. Sprinkle with the remaining Cheddar-Parmesan mixture, plus extra Parmesan if desired, and continue to bake until golden brown and bubbly, about 15 minutes more. Let stand for 10 minutes before serving.

For an extra layer of flavor, consider adding a splash of dry sherry to the vegetable sauté.
Feel free to substitute other vegetables for the broccoli, such as asparagus or green beans.
To prevent the casserole from drying out, cover it loosely with foil during the last 15 minutes of baking.
Leftovers can be stored in the refrigerator for up to 3 days.
