For extra crispy potatoes, soak them in cold water for 30 minutes before roasting. This helps to remove excess starch. Don't overcrowd the baking sheet! Overcrowding will steam the potatoes instead of roasting them. If necessary, use two baking sheets. Feel free to experiment with other herbs and spices, such as rosemary, thyme, or paprika.
