Follow The Directions

01

Step
5 mins

Prepare the Lemon Soak: In a saucepan, combine water, lemon juice, and sugar. Bring to a simmer over medium heat, stirring occasionally, until the sugar is completely dissolved (about 5 minutes). Remove from heat and stir in the sherry.

02

Step
5 mins

Assemble the Trifle: Divide the pound cake cubes evenly among four 2-cup mason jars. Pour the lemon soak evenly over the cake in each jar, allowing it to saturate the cake.

03

Step
5 mins

Create the Mascarpone Layer: In a mixing bowl, combine the mascarpone cheese, 3/4 cup of lemon curd, and lemon zest. Gently mix until well combined. Divide the mascarpone mixture among the jars, pressing lightly with the back of a spoon to create an even layer.

04

Step
1 mins

Add the Lemon and Raspberry Layers: Spoon the remaining 1 cup of lemon curd over the mascarpone layer in each jar. Top with fresh raspberries and sprinkle with grated chocolate.

05

Step
15 mins

Chill and Serve: Cover the mason jars and refrigerate for at least 15 minutes, or up to 24 hours, to allow the flavors to meld. Just before serving, top each trifle with a generous swirl of whipped cream.

For a richer flavor, use a good quality, artisanal lemon curd.
If you don't have mason jars, any small glass bowls or ramekins will work beautifully.
Feel free to substitute other berries, such as blueberries or strawberries, for the raspberries.
For an extra touch of elegance, garnish with fresh mint leaves before serving.
