For a richer flavor, consider using a higher quality Marsala wine. Sweet Marsala can also be used, but it will result in a sweeter sauce. If you prefer a thicker sauce, you can whisk together 1 tablespoon of cornstarch with 2 tablespoons of cold water to create a slurry. Stir the slurry into the sauce during the last minute of cooking on 'Saute' mode. Serve this Chicken Marsala with a side of mashed potatoes, pasta, or rice to soak up all that delicious sauce. A side of steamed green beans or asparagus also makes a wonderful accompaniment.
