Follow The Directions

01

Step
0 mins

Gather all ingredients.

02

Step
17 mins

In a saucepan, bring water and quinoa to a boil. Reduce heat to medium-low, cover, and simmer until quinoa is tender, approximately 15-20 minutes. Drain any excess water and set aside.

03

Step
0 mins

In a small bowl, whisk together honey, paprika, garlic powder, onion powder, cayenne, and 2 tablespoons water. Set aside as your hot honey glaze.

04

Step
2 mins

While the quinoa cooks, prepare the green beans. Fill a large skillet with 1 inch of water and bring to a simmer over medium heat. Add green beans, cover, and cook until just tender, about 2-3 minutes. Drain and set aside.

05

Step
4 mins

Wipe out the skillet and heat olive oil over medium heat. Season salmon pieces with salt. Add salmon to the skillet and cook until the fish flakes easily with a fork, approximately 4 minutes, turning after 2 minutes. Remove salmon from the skillet and set aside.

06

Step
2 mins

Add the honey mixture to the skillet. Cook and stir until the mixture is bubbly and slightly thickened, about 2 minutes. Remove the skillet from the heat. Return the cooked salmon to the skillet and toss to coat in the hot honey sauce. Set aside.

07

Step
0 mins

Prepare the honey mustard dressing by whisking together olive oil, white wine vinegar, Dijon mustard, parsley, dill, honey, black pepper, and salt in a small bowl.

08

Step
0 mins

To assemble the bowls, divide quinoa evenly between two bowls. Top with the hot-honey-sauced salmon, green beans, cucumber, tomatoes, and, if desired, red onions and olives. Drizzle generously with the honey mustard dressing and serve immediately.

For an extra layer of flavor, consider grilling the salmon instead of pan-searing. Grilling will add a smoky char that complements the sweet and spicy honey glaze beautifully.
If you don't have tri-color quinoa on hand, regular quinoa or brown rice works just as well.
Adjust the amount of cayenne pepper according to your spice preference. Start with a smaller amount and add more to taste.
The honey mustard dressing can be made ahead of time and stored in the refrigerator for up to 3 days.
Garnish with a sprinkle of sesame seeds or a few sprigs of fresh cilantro for added visual appeal.
