In a large bowl, combine the shrimp, olive oil, smoked paprika, granulated garlic, salt, and pepper. Toss well to ensure the shrimp are evenly coated. Allow the shrimp to marinate for at least 15 minutes to absorb the flavors. (Prep time: 15 minutes)

Preheat an outdoor grill or grill pan to high heat. If using an outdoor grill, thread the marinated shrimp onto skewers to prevent them from falling through the grates. Grill the shrimp for 2 to 3 minutes per side, or until they turn bright pink and the meat is opaque and cooked through. Remove the grilled shrimp from the skewers or grill pan and set aside. Warm the tortillas on the grill for about 10 to 15 seconds per side, just until pliable. Be careful not to burn them. (Cook time: 5-7 minutes)

Roughly chop the grilled shrimp into 1/2-inch pieces and transfer them to a large bowl. Add the chopped Romaine lettuce, coarsely chopped croutons, and creamy Caesar dressing to the bowl. Gently toss all the ingredients together until well combined. Divide the shrimp and Caesar salad mixture evenly down the center of each warmed tortilla. Fold in the sides of the tortillas and then tightly roll them up from the bottom. Cut each wrap in half diagonally before serving. (Assembly time: 5 minutes)

For an extra layer of flavor, try adding a sprinkle of grated Parmesan cheese to the wraps before rolling them up.
If you don't have a grill, you can pan-sear the shrimp in a skillet over medium-high heat.
To make this recipe even healthier, use whole wheat tortillas and a light Caesar dressing.
Feel free to add other vegetables to the wraps, such as sliced tomatoes or avocado.
