Step

Preheat an outdoor grill to medium heat (about 350°F or 175°C) and lightly oil the grill grate. (5 minutes)

Lay out a large sheet of heavy-duty aluminum foil. Spread the sliced beets evenly onto the foil.

Drizzle the olive oil over the beets and season with sea salt. Gently toss to coat the beets evenly.

Fold the foil over the beets, carefully sealing the edges together to create a tightly sealed packet. Ensure there are no gaps to allow steam to escape.

Place the foil packet on the preheated grill and cook, turning the packet once halfway through, until the beets are tender and easily pierced with a fork. (Approximately 30 minutes).

Carefully open the foil packet, being mindful of escaping steam. Sprinkle the crumbled feta cheese and chopped chives evenly over the beets.

Close the foil packet again loosely, allowing the cheese to melt without sticking to the foil. Grill for another 5 minutes, or until the feta is softened and slightly warmed through.

Remove the foil packet from the grill and let it rest for a couple of minutes before carefully opening it. Serve immediately.

For even faster cooking, you can microwave the beets for 5 minutes before grilling.
Try adding a squeeze of lemon juice or a drizzle of balsamic glaze after grilling for extra flavor.
If you don't have chives, fresh dill or parsley also work well.
For a richer flavor, consider using goat cheese instead of feta.
