Follow The Directions

01

Step

Preheat grill to medium heat (about 350-400°F) and lightly oil the grate. (5 minutes)

02

Step

In a small saucepan, melt 6 tablespoons of butter over medium heat. Stir in granulated sugar and nutmeg until sugar is dissolved and the mixture is smooth. (5 minutes)

03

Step

Brush pineapple spears generously with the butter mixture. (2 minutes)

04

Step

Arrange pineapple spears on the preheated grill. Cover and grill, turning occasionally, until lightly browned and caramelized. (7-10 minutes)

05

Step

Transfer grilled pineapple to a platter and keep warm.

06

Step

In another saucepan, melt the remaining 1/2 cup butter over medium heat. Stir in brown sugar and heavy cream. (2 minutes)

07

Step

Bring to a boil, stirring constantly to prevent burning. Once boiling, reduce heat slightly and continue to stir for 2-3 minutes until the sauce thickens slightly. (5 minutes)

08

Step

Remove from heat and stir in vanilla extract and salt. (1 minute)

09

Step

To assemble the sundaes: Place a scoop or two of vanilla ice cream in a bowl. Top with grilled pineapple spears and drizzle generously with warm butterscotch sauce. Serve immediately.

For a deeper butterscotch flavor, use dark brown sugar.
If fresh pineapple is not available, canned pineapple rings can be used. Be sure to drain them well before grilling. Reduce grilling time accordingly.
A sprinkle of toasted pecans or walnuts adds a delightful crunch to the sundae.
The butterscotch sauce can be made ahead of time and reheated gently before serving.

The butterscotch sauce is a little sweet for my taste. Next time I'll try adding a pinch more salt.
