In the bowl of a stand mixer fitted with the dough hook, combine warm water, honey, and yeast. Let stand until foamy, about 10 minutes.

Add 3 cups of bread flour, olive oil, eggs, vital wheat gluten, and softened butter to the yeast mixture. Mix on low speed (speed 2 if using a KitchenAid) until just combined, about 2-3 minutes.

Add salt and the remaining 3 cups of bread flour. Continue mixing on low speed until the flour is fully incorporated and the dough begins to pull away from the sides of the bowl, approximately 5-7 minutes. If the dough remains sticky, add additional flour, 1/4 cup at a time, kneading for about 2 minutes after each addition, until the dough achieves a smooth, elastic texture and releases cleanly from the bowl's sides. Continue to mix for another 5-7 minutes.

Lightly grease a large bowl with cooking spray or olive oil.

Transfer the dough to the greased bowl, turning to coat. Cover the bowl with a damp towel and place in a warm, draft-free area to rise until doubled in size, approximately 60-90 minutes.

Gently punch down the risen dough to release the air. Divide the dough into two equal portions. Shape each portion into a loaf and place into a greased 9x5 inch loaf pan, or shape into braids and place on a baking sheet lined with parchment paper. Cover loosely and let rise again until doubled, about 1 hour.

Preheat oven to 350 degrees F (175 degrees C).

Bake in the preheated oven until the loaves are golden brown and an instant-read thermometer inserted into the center registers 200 degrees F (93 degrees C), approximately 25-30 minutes. If the tops begin to brown too quickly, tent loosely with foil.

Remove from oven and let cool in pans for 10 minutes before transferring to a wire rack to cool completely.

For a richer flavor, substitute melted butter for olive oil.
If you don't have vital wheat gluten, you can omit it, but the bread may be slightly less elastic.
For a sweeter loaf, brush the tops with a simple sugar glaze after baking.
These loaves freeze beautifully. Wrap tightly in plastic wrap and then foil for best results.
