Follow The Directions

01

Step

In a large bowl, whisk together the sliced onion, gochujang, apple cider vinegar, chicken stock, honey, brown sugar, grated ginger, soy sauce, yellow mustard, ground cinnamon, minced garlic, salt, thyme sprigs, and black pepper until well combined. (5 minutes)

02

Step

Dredge the pork shoulder roast in the gochujang sauce, ensuring all sides are well coated. Transfer the sauced pork to a slow cooker. Pour any remaining sauce over the top. (5 minutes)

03

Step

Cook on Low for approximately 8 hours, or until the pork roast is easily shredded with a fork. (8 hours)

04

Step

Preheat your oven to 350 degrees F (175 degrees C). (10 minutes)

05

Step

Transfer the cooked pork roast to a large bowl and shred the meat using two forks. In the meantime, pour the sauce from the slow cooker into a medium-sized pot. Bring the sauce to a boil over medium-high heat, then reduce the heat to a simmer. (10 minutes)

06

Step

In a small bowl, mix together 1 tablespoon of butter and the flour until it forms a smooth paste. Add this paste to the simmering sauce in the pot and stir continuously until well combined. Cook until the sauce has heated through and slightly thickened. (5 minutes)

07

Step

Spread the remaining 3 tablespoons of butter evenly over the insides of the hamburger buns. Arrange the buttered buns on a baking sheet. (3 minutes)

08

Step

Toast the buns in the preheated oven until they are golden brown and slightly crisp. (5-7 minutes)

09

Step

Pour the thickened sauce into the bowl with the shredded pork and mix thoroughly to combine. Top the pork with the thinly sliced green onions. Spoon the gochujang pulled pork over the toasted buns and serve immediately. (5 minutes)

For an extra layer of flavor, try searing the pork shoulder in a hot skillet before adding it to the slow cooker.
Adjust the amount of gochujang to your preferred spice level.
Serve with kimchi slaw or pickled vegetables for a complete Korean-inspired meal.
