Add the chopped bacon and onion and sauté until the bacon is crispy and the onions are translucent, about 5 minutes. Add the asparagus and continue to sauté for another 3-4 minutes, or until the asparagus is tender-crisp. Season with salt and pepper. (Prep time: 3 minutes, Cook time: 8-9 minutes)

In a medium bowl, whisk together the egg yolks and Parmesan cheese. Season generously with salt and freshly ground black pepper. (Prep time: 2 minutes)

Add the cooked pasta to the skillet with the bacon and asparagus mixture. Toss to combine and warm through. Remove the skillet from the heat. (Prep time: 1 minute, Cook time: 1-2 minutes)

Pour the egg yolk mixture over the pasta and stir vigorously and continuously until the yolks thicken and create a creamy sauce that coats the spaghetti. If the sauce is too thick, add a tablespoon or two of the reserved pasta water at a time until you reach your desired consistency. (Prep time: 1 minute, Cook time: 2-3 minutes)

Serve immediately, garnished with extra grated Parmesan cheese and a generous grind of black pepper.

For an even richer flavor, use guanciale instead of bacon.
Be sure to stir the egg yolk mixture quickly and continuously to prevent the eggs from scrambling.
Adjust the amount of Parmesan cheese to your preference.
If you don't have asparagus, peas or mushrooms make excellent substitutes.
