Follow The Directions

01

Step
1 mins

Melt butter in a cast iron skillet over medium heat. (Approximately 1 minute)

02

Step
3 mins

Add ham to the skillet; cook until browned and slightly crisp, about 3 minutes per side. The edges should be nicely caramelized.

03

Step
1 mins

Remove ham from skillet and set aside, keeping it warm. Reserve the rendered fat in the skillet.

04

Step
2 mins

Pour strong black coffee into the pan, deglazing the skillet by scraping up the flavorful browned bits from the bottom with a wooden spoon or spatula. (Approximately 1 minute)

05

Step

Bring the coffee mixture to a gentle boil, allowing it to reduce slightly, about 2-3 minutes, until it thickens into a light gravy consistency.

06

Step

Serve the redeye gravy immediately over the pan-fried ham. Traditionally served with biscuits or grits.

For a richer gravy, consider adding a tablespoon of heavy cream at the end.
If you don't have country ham, you can substitute with another type of cured ham, but the flavor will be different.
Adjust the amount of coffee to your preference; some prefer a more intense coffee flavor.
Be careful not to burn the butter or the ham. Keep the heat at a medium level.
