In a medium saucepan, combine the coconut oil, grated turmeric root, grated ginger root, and black pepper. Add half of the water. Cook and stir over medium heat until small bubbles begin to form around the edges (approximately 1-2 minutes).

Reduce the heat to medium-low. Continue to cook, stirring constantly and adding small amounts of the remaining water as needed, until the mixture thickens into a smooth, fragrant paste (approximately 5-8 minutes).

Transfer the fresh turmeric paste to a clean glass container. Allow the paste to cool to room temperature before sealing the container tightly with a lid. Refrigerate for up to 3 days, or freeze in ice cube trays for longer storage.

For a smoother paste, use a microplane to grate the turmeric and ginger.
Adjust the amount of black pepper to your preference. It enhances turmeric absorption and adds a subtle kick.
When freezing the paste in ice cube trays, transfer the frozen cubes to a freezer bag for easy storage.
This paste is excellent added to coconut milk with chicken or tofu and simmered to create a fragrant stew.
