Preheat oven to 425°F (220°C). Line a large, rimmed baking sheet with foil and lightly coat with cooking spray. (2 minutes)

In a medium bowl, toss sweet potatoes with 2 teaspoons of olive oil, 1/4 teaspoon of kosher salt, and 1/8 teaspoon of black pepper. Spread evenly on one half of the prepared baking sheet. (3 minutes)

Bake in the preheated oven for 5 minutes.

While the potatoes are baking, whisk together Dijon mustard, honey, and cayenne pepper in a small bowl. In a separate bowl, toss broccoli florets with the remaining olive oil, kosher salt, and black pepper. (5 minutes)

Remove baking sheet from the oven. Place salmon fillets on the other half of the baking sheet, next to the sweet potatoes. Spread 2 teaspoons of the mustard mixture evenly over each salmon fillet, then sprinkle generously with everything bagel seasoning. Add the broccoli florets to the baking sheet alongside the sweet potatoes. (5 minutes)

Return the baking sheet to the oven and bake until the salmon flakes easily with a fork and the vegetables are tender and slightly golden, about 12 minutes. (12 minutes)

In the small bowl with the remaining mustard mixture, stir in soy sauce. Drizzle this glaze over the roasted vegetables just before serving. (2 minutes)

For extra crispy sweet potatoes, soak them in cold water for 30 minutes before tossing with oil and spices.
Feel free to substitute other vegetables like Brussels sprouts, bell peppers, or asparagus based on your preference and availability. Adjust cooking time accordingly.
If using thicker salmon fillets, you may need to increase the cooking time by a few minutes. Always check for doneness by flaking the salmon with a fork.
The sweet and spicy mustard glaze can be adjusted to your taste. Add more cayenne pepper for extra heat, or a touch of lemon juice for brightness.
