Follow The Directions

01

Step
5 mins

Preheat your oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish to prevent sticking. (Prep time: 5 minutes)

02

Step
10 mins

In a large mixing bowl, combine the eggs, mashed banana, rolled oats, sunflower seeds, cinnamon, dry milk powder, chopped dates, raisins, walnuts, dried apricots, wheat germ, maple syrup, and whole-wheat pastry flour. Mix thoroughly until all ingredients are evenly distributed and the batter is well combined. (Prep time: 10 minutes)

03

Step
2 mins

Pour the mixture into the prepared baking dish and spread it evenly to ensure uniform thickness across the entire surface. (Prep time: 2 minutes)

04

Step
20 mins

Bake in the preheated oven for 20 minutes, or until the edges are golden brown and the center is set. A toothpick inserted into the center should come out clean. (Bake time: 20 minutes)

05

Step
30 mins

Remove the baking dish from the oven and allow the bars to cool completely on a wire rack. Once cooled, cut the slab into 9 equal-sized bars. (Cooling time: 30 minutes)

06

Step
5 mins

Wrap each bar individually in plastic wrap to maintain freshness and prevent them from sticking together. Store in an airtight container at room temperature. (Prep time: 5 minutes)

For a richer flavor, consider toasting the walnuts and sunflower seeds lightly before adding them to the mixture.
Feel free to substitute other dried fruits or nuts based on your preference or what you have on hand. Chopped almonds, pecans, dried cranberries, or cherries would all be excellent additions.
If you prefer a chewier bar, reduce the baking time by a few minutes.
For a vegan option, replace the eggs with flax eggs (1 tablespoon ground flaxseed mixed with 3 tablespoons water per egg) and ensure your milk powder is plant-based.
