For a thicker icing, ideal for outlining, use less milk. For a thinner icing, perfect for flooding, add milk gradually until the desired consistency is reached.
Gel food coloring is recommended as it is more concentrated and less likely to alter the icing's consistency.
If you don't have almond extract, vanilla extract, lemon extract, or even a citrus zest can be used as a substitute.
Store the royal icing in an airtight container at room temperature to prevent it from drying out. If it does dry out, add a few drops of water and mix until smooth.
