For a vegetarian option, replace the bacon with sautéed mushrooms or spinach. Add a pinch of red pepper flakes to the egg mixture for a little kick. These cupcakes can be made ahead of time and reheated. Store in the refrigerator for up to 3 days. Experiment with different cheeses! Gruyere, cheddar, or pepper jack would all be delicious.
