For a deeper flavor, consider adding a minced clove of garlic along with the bell peppers and zucchini.
If using chicken broth instead of bouillon granules, reduce the amount of salt added to the dish.
Serve this dish over rigatoni, creamy polenta, or alongside crusty garlic bread for soaking up the delicious sauce.
Add a pinch of red pepper flakes for extra heat.
