Prepare the Blueberry Sauce: In a blender, combine the minced garlic, fresh blueberries, peach preserves, sesame oil, Dijon mustard, rice wine vinegar, brown sugar, and soy sauce. Blend until completely smooth. (5 minutes)

Sauté Chicken and Mushrooms: Heat the olive oil in a large skillet or wok over high heat. Add the bite-sized chicken pieces and sliced mushrooms. Cook, stirring frequently, until the chicken is no longer pink inside and the juices run clear. This should take approximately 7 minutes.

Add Aromatics: Stir in the minced fresh ginger, garlic salt, and freshly ground black pepper. Continue to cook and stir until fragrant, about 1 minute.

Combine Vegetables and Sauce: Toss the chopped green onions and frozen mixed vegetables with the chicken and mushroom mixture. Pour the blueberry sauce evenly over the vegetables. (2 minutes)

Simmer: Continue cooking over medium-high heat until the blueberry sauce comes to a boil, approximately 10 minutes. Then, reduce the heat to low and cook until the vegetables are tender and heated through, about 2-4 minutes.

Serve: Remove from heat and allow the stir-fry to cool for 3 minutes before serving. Serve hot over cooked brown rice, and garnish with toasted sesame seeds.

For a richer flavor, marinate the chicken in 1 tablespoon of soy sauce and 1 teaspoon of sesame oil for at least 30 minutes before cooking.
If you prefer a thicker sauce, you can simmer the blueberry sauce separately in a saucepan before adding it to the stir-fry.
Feel free to substitute other vegetables based on your preference and availability. Bell peppers, broccoli florets, or snow peas would be excellent additions.
To enhance the nutty flavor, lightly toast the sesame seeds in a dry pan before sprinkling them over the finished dish.
This recipe is also delicious served over quinoa or noodles instead of brown rice.
