Follow The Directions

Preheat your oven to 350 degrees F (175 degrees C). (5 minutes)

Place chicken breasts in a baking dish and season generously with salt and pepper. (2 minutes)

While the chicken is baking, cook bacon in a large skillet over medium heat, turning occasionally, until most of the fat has rendered and the bacon is partially cooked but still pliable. (About 5 minutes)

Drain bacon on a paper towel-lined plate to remove excess grease.

Wrap 2 bacon strips around each partially cooked chicken breast in the baking dish.

Return the chicken to the oven and continue baking until the bacon is crispy and the chicken is cooked through and no longer pink in the center. (Approximately 15 minutes). Use an instant-read thermometer inserted into the center of the chicken to ensure it reaches at least 165 degrees F (74 degrees C).

Sprinkle the chicken with shredded Cheddar cheese.

Continue baking until the cheese is melted and bubbly. (2 to 5 minutes)

Serve immediately with lime halves for squeezing over the chicken.

For extra flavor, marinate the chicken breasts in your favorite barbecue sauce for at least 30 minutes before baking.
If you don't have hickory-smoked bacon, any thick-cut bacon will work well.
Feel free to experiment with different types of cheese, such as Monterey Jack or Colby Jack.
To prevent the bacon from burning, you can partially cook it in the microwave before wrapping it around the chicken.
