In a large bowl, dissolve dark brown sugar, 1 tablespoon honey, and yeast into warm water. Let stand until foamy, about 10 minutes.

Stir in 3 tablespoons melted butter, half-and-half, and 1.5 teaspoons salt into the yeast mixture.

Gradually beat in 1 cup of flour until a wet, sloppy dough forms. Turn dough out onto a floured surface and knead in the remaining 1 cup of flour until the dough is only slightly sticky, about 10 minutes. Add more flour if needed. Form into a ball.

Grease a large bowl with 1 teaspoon of butter, place the dough ball in the bowl, and turn to coat. Cover with plastic wrap and let rise in a warm place until doubled, 1 hour to 1 hour and 30 minutes.

Preheat oven to 450 degrees F (230 degrees C). Spray a baking sheet with cooking spray.

In a large pot, bring water, baking soda, and 3 tablespoons honey (or to taste) to a full rolling boil. Punch down the dough and divide it in half. Shape each half into a small loaf. Carefully drop one loaf into the boiling water and cook for 30 seconds on each side. The dough should float. Remove gently, let excess water drip off, and place on the prepared baking sheet. Repeat with the second loaf.

Sprinkle each loaf lightly with salt. Use a sharp knife to cut an X shape into the top of each loaf.

Bake on a center rack in the preheated oven for 10 minutes. Reduce oven temperature to 400 degrees F (205 degrees C) and continue baking until the crust is shiny and browned and the loaves are done in the middle, about 10 more minutes. For a softer crust, brush the tops of the loaves with melted butter.

For a deeper pretzel flavor, use a dark beer instead of water in the dough.
Adjust the amount of honey in the boiling water to suit your sweetness preference.
Be careful when handling the dough in the boiling water to avoid splashes.
For pretzel rolls, divide the dough into smaller portions before boiling.
