Follow The Directions

01

Step
20 mins

Prepare the Chicken: Peel the skin from the chicken thighs and trim off any excess fat. Carefully cut each thigh into a single, flat 'steak' shape, working around the bone. Save any smaller pieces for cooking as well. Rinse the thighs under cold water to remove any film. Place the prepared chicken thighs in a large bowl. (Prep time: 20 minutes)

02

Step
5 mins

Make the Marinade: In a food processor, combine the soy sauce, chopped apple, brown sugar, garlic cloves, sesame oil, gochugaru, and minced ginger. Pulse until the marinade is smooth and well-combined. (Prep time: 5 minutes)

03

Step
6 hrs

Marinate the Chicken: Pour the prepared marinade into the bowl with the chicken thighs. Stir to ensure that each piece is thoroughly coated. For enhanced flavor absorption, pierce the chicken with a skewer. Cover the bowl with plastic wrap and refrigerate for at least 6 hours, or preferably overnight (6-12 hours).

04

Step
20 mins

Cook the Chicken: Heat a skillet over medium heat. Remove the chicken from the marinade, allowing any excess to drip off. Add the marinated chicken thighs to the hot skillet. Cook, stirring occasionally, until the chicken is no longer pink in the center and is cooked through. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). (Cook time: 15-20 minutes)

05

Step
5 mins

Garnish and Serve: Transfer the cooked chicken thighs to a serving plate. Garnish generously with sesame seeds. Serve immediately with fresh Boston or Bibb lettuce leaves for wrapping, and scallion strips for added flavor and presentation.

For best results, marinate the chicken overnight to allow the flavors to fully penetrate.
If you don't have gochugaru, you can substitute with red pepper flakes, but be mindful of the spice level.
Serve with a side of rice and kimchi for a complete Korean meal.
Adjust the amount of gochugaru to your preferred level of spiciness.
If you don't have a food processor, you can finely chop or mince the apple, garlic, and ginger and whisk all the marinade ingredients together.
