Follow The Directions

01

Step

Steam the cauliflower rice according to package directions (approximately 6 minutes). Once cooked, transfer to a large bowl and gently fold in the chopped cilantro and lime juice. Season with salt and pepper to your liking. Cover to keep warm.

02

Step

While the cauliflower rice steams, heat the shredded pork in a skillet over medium heat until warmed through (3-5 minutes). Stir occasionally to ensure even heating.

03

Step

In a separate microwave-safe bowl, combine the drained corn and black beans. Microwave until heated through (approximately 2 minutes).

04

Step

To assemble the bowls, start with a generous 5-ounce portion of cilantro-lime cauliflower rice. Top with 4 ounces of warmed pork, black beans, and corn. Garnish each bowl with 1 tablespoon each of salsa, Cheddar cheese, crema con sal, and cilantro ranch dressing. Finish with slices of fresh avocado and lime wedges for squeezing.

For an extra layer of flavor, try grilling the corn before adding it to the bowl.
Feel free to substitute the pork with shredded chicken, ground beef, or tofu.
Adjust the amount of lime juice and spices to suit your taste preferences.
If you don't have crema con sal, sour cream makes a great substitute.
Make it a wrap! These ingredients are also delicious when assembled in a warm tortilla.
