For an extra layer of flavor, consider grilling the corn before cutting it off the cob. The smoky char adds a wonderful depth to the salad. If you don't have orange bell pepper, yellow or red bell pepper works just as well. Feel free to experiment with different colors! To prevent the red onion from being too overpowering, soak the diced onion in cold water for 10 minutes, then drain well before adding it to the salad. This salad is best served chilled. Prepare it at least 30 minutes before serving to allow the flavors to meld.
