Prepare the Noodles (5 minutes): Cover rice vermicelli noodles with boiling water and let stand for 5 minutes. Drain well and set aside.

Sauté the Chicken (5-7 minutes): Heat half of the vegetable oil in a wok or large skillet over high heat. Add ground chicken and hot pepper sauce, stir-frying for 3-5 minutes until the chicken is browned. Remove from the wok and set aside on a platter.

Cook the Vegetables and Shrimp (5 minutes): Add the remaining vegetable oil and sliced red pepper to the wok. Stir-fry for 3 minutes. Add the shrimp and continue to stir-fry for another 2 minutes, until the shrimp turns pink and opaque.

Create the Sauce (2 minutes): Stir in the minced garlic, grated ginger, vegetable or chicken broth, ketchup, lime juice, granulated sugar, and fish sauce. Bring the mixture to a boil.

Combine and Heat (3 minutes): Add the drained noodles and the reserved cooked chicken to the wok. Toss to combine all the ingredients thoroughly and heat through.

Finish and Serve (1 minute): Add the bean sprouts and toss gently. Sprinkle with sliced green onions, fresh coriander or parsley leaves, and chopped peanuts before serving.

For a vegetarian option, omit the chicken and shrimp. Consider adding tofu for extra protein.
Adjust the amount of hot pepper sauce to your preference. Start with a small amount and add more to taste.
Be careful not to overcook the shrimp, as they can become rubbery. They should be cooked just until they turn pink.
Garnish generously with chopped peanuts and fresh herbs for added flavor and texture.
The best noodles for pad thai are thin, flat rice noodles. If you can't find them, you can use regular rice noodles, but be sure to cook them according to the package directions.
