Step

Bring a large pot of salted water to a rolling boil. Add the fettuccine and cook according to package directions, about 8-10 minutes, until al dente. Drain well, reserving about 1/2 cup of pasta water.

While the pasta is cooking, melt 1/4 cup butter in a large skillet over medium heat. Add the chicken and garlic and cook, stirring occasionally, until the chicken is browned and cooked through, about 5-7 minutes. Add the mushrooms and bell peppers and cook until the vegetables are tender-crisp, about 5-7 minutes. Remove from skillet and set aside.

In the same skillet, melt the remaining 1/2 cup butter over medium heat. Add half of the heavy cream and bring to a simmer. Gradually whisk in the Parmesan cheese, alternating with the cream cheese, until the cheese is melted and the sauce is smooth. Stir in the remaining heavy cream and simmer gently until the sauce has thickened slightly, about 3-5 minutes. Season with salt and pepper to taste.

Return the chicken and vegetable mixture to the skillet with the sauce. Add the drained pasta and toss to coat. Stir in the beaten egg and cook, stirring constantly, for about 1 minute, until the sauce has thickened slightly more and the egg is incorporated.

If the sauce is too thick, add a little of the reserved pasta water to thin it out.

Serve immediately, garnished with additional Parmesan cheese, if desired.

For an even richer sauce, use full-fat cream cheese and freshly grated Parmesan cheese.
Feel free to add other vegetables to the primavera, such as asparagus, zucchini, or peas.
If you don't have fettuccine, you can use any long pasta shape, such as spaghetti or linguine.
To make ahead, cook the pasta and sauce separately. Combine them just before serving.
