Heat 1/4 teaspoon olive oil in a large skillet or wok over medium heat. Add the chicken and cook, stirring occasionally, until golden brown and cooked through (about 5-7 minutes). Transfer the chicken to a bowl and set aside.

Add the remaining 1/4 teaspoon olive oil to the skillet. Add the green bell pepper, onion, celery, and carrots. Stir-fry for about 5 minutes, or until the vegetables begin to soften.

In a separate bowl, combine the boiling water, soy sauce, chicken bouillon cube, salt, and sugar. Pour this mixture over the vegetables in the skillet. Bring to a simmer and cook for another 7 minutes, or until the carrots are tender.

Add the thinly sliced bok choy and bean sprouts to the skillet. Stir-fry for 3-5 minutes, or until the bok choy is tender-crisp.

Return the cooked chicken to the skillet. In a small bowl, whisk together the 2 teaspoons of water and cornstarch to create a slurry. Pour the slurry into the skillet and stir to combine. Simmer for 3-5 minutes, or until the sauce has thickened to your desired consistency. Serve hot with rice or noodles.

For a richer flavor, marinate the chicken in a mixture of soy sauce, ginger, and garlic for at least 30 minutes before cooking.
Feel free to add other vegetables like mushrooms, water chestnuts, or bamboo shoots to your chop suey.
Adjust the amount of soy sauce and sugar to your preference. You can also add a dash of sesame oil for extra flavor.
Make sure to have all your ingredients prepped and ready to go before you start cooking, as the stir-frying process moves quickly.
