In a large pot, combine the chicken broth, water, minced onion, jalapeño pepper, ginger, and garlic. Bring the mixture to a rolling boil. (5 minutes)

Carefully add the chicken breasts to the boiling broth. Reduce heat to medium and cook until the chicken is no longer pink in the center and registers 165°F (74°C) on an instant-read thermometer. (15-20 minutes)

Remove the cooked chicken breasts from the pot and set aside to cool slightly until easily handled. (5 minutes)

Shred the chicken using two forks, then return the shredded chicken to the pot with the broth.

Add the chopped bok choy to the soup and cook until it wilts and turns bright green. (3-5 minutes)

Season the soup with sea salt to taste. Serve hot and enjoy!

For a richer flavor, use homemade chicken broth.
Adjust the amount of jalapeño based on your spice preference.
Adding a splash of sesame oil at the end can enhance the flavor.
