For a richer flavor, use heavy cream instead of light cream. Dry sherry can be substituted for sherry. To toast the almonds, spread them on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or until lightly golden. Fresh rosemary and basil can be used instead of dried. Use about 1 tablespoon of each, chopped. To make ahead, prepare the casserole up to the baking step. Cover and refrigerate for up to 24 hours. Add 10-15 minutes to the baking time.
