Step

Prepare the Tomato Relish: Heat 1 tablespoon of olive oil in a non-stick skillet over medium-high heat. Add the diced tomatoes, capers, and red pepper flakes. Sauté until the tomatoes begin to soften and release their juices, about 3 minutes. Remove from heat and stir in the balsamic vinegar. Set aside.

Assemble the Panini: Brush one side of each slice of sourdough bread with the remaining olive oil. Spread the opposite side of each slice with pesto. On a clean work surface, place two slices of bread, pesto-side up. Layer each with sliced mozzarella cheese, followed by the tomato relish. Season with sea salt and freshly ground black pepper. Top with the remaining bread slices, oiled-side up.

Toast the Panini: Heat a large skillet or panini press over medium heat. Place the assembled paninis in the skillet. If using a skillet, place a heavy skillet or pot on top of the paninis to press them down as they cook. Toast for 5 to 7 minutes per side, or until the bread is golden brown and the mozzarella cheese is melted and gooey.

Serve: Remove the Caprese Panini from the skillet, slice in half, and serve immediately. Enjoy!

For an enhanced flavor, consider using sun-dried tomato pesto instead of regular basil pesto.
Fresh buffalo mozzarella will elevate this panini to a gourmet level.
If you don't have a heavy skillet for pressing, you can use a brick wrapped in foil.
Adjust the amount of red pepper flakes to your preferred level of spiciness.
