Arrange the luncheon meat in two separate piles on opposite sides of a large stockpot or Dutch oven. Layer the sliced sausage, onion, and kimchi on top, creating a well in the center. (5 minutes)

In a small bowl, whisk together the Korean red pepper powder, soy sauce, gochujang, minced garlic, and black pepper until a smooth paste forms. Pour this spicy mixture into the center of the pot. Sprinkle the chopped green onions over the top, reserving some for garnish. (3 minutes)

Pour the chicken broth into the pot. Bring the mixture to a vigorous boil over high heat, then reduce the heat to low, cover, and simmer gently, stirring occasionally, until the flavors have melded and the broth has deepened in color, about 10 minutes. (15 minutes)

While the stew simmers, bring a separate pot of water to a boil. Add the ramen noodles and cook, stirring occasionally, until they are partially cooked and slightly softened, about 2 minutes. Drain the noodles thoroughly. (5 minutes)

Transfer the drained ramen noodles to the simmering stew. Cook, stirring gently, until the noodles are tender but still firm to the bite, about 5 minutes. (7 minutes)

Optional: Top the stew with a slice of American cheese. Let it melt slightly before serving. Garnish with additional chopped green onions. (2 minutes)

Adjust the amount of Korean red pepper powder to your desired level of spiciness. Start with less and add more to taste.
Feel free to customize the stew with other ingredients such as tofu, mushrooms, enoki mushrooms, rice cakes (tteok), or baked beans.
For a richer flavor, use anchovy broth instead of chicken broth.
If you don't have American cheese, you can use mozzarella or cheddar cheese, or omit the cheese altogether.
Serve hot, directly from the pot, for a truly authentic experience.
