Follow The Directions

01

Step

Preheat the oven to 350°F (175°C). (5 minutes)

02

Step

In a medium bowl, combine the softened butter, crushed saltines, and toasted walnuts. Press the mixture evenly into the bottom of an 8x12 inch baking dish. (10 minutes)

03

Step

In a large, clean, and dry metal or glass bowl, using an electric mixer, beat the egg whites, granulated sugar, cream of tartar, and white vinegar until stiff, glossy peaks form. Gently fold in 1 teaspoon of vanilla extract. (12 minutes)

04

Step

Spread the meringue evenly over the prepared crust. Bake in the preheated oven until the meringue is golden brown and firm to the touch, 10 to 15 minutes. Keep a close eye to prevent burning! (15 minutes)

05

Step

Remove from the oven and let the crust cool completely. (30 minutes)

06

Step

In a separate bowl, gently mix the blueberry pie filling with the fresh lemon juice. Spread the blueberry mixture evenly over the cooled meringue. (5 minutes)

07

Step

In another chilled bowl, using an electric mixer, beat the heavy cream and 1/2 teaspoon of vanilla extract until soft peaks begin to form. Gradually add the confectioners' sugar and continue beating until fluffy, stable peaks form. Be careful not to overwhip. (10 minutes)

08

Step

Gently spread the whipped cream over the blueberry pie filling, creating swirls or decorative patterns as desired. Dust lightly with additional confectioners' sugar. (8 minutes)

09

Step

Refrigerate the dessert for at least 2 hours before serving to allow the flavors to meld and the crust to set. (120 minutes)

For best results, ensure your egg whites are at room temperature before whipping.
To toast the walnuts, spread them on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or until fragrant. Alternatively, toast them in a dry skillet over medium heat, stirring frequently.
If you don't have saltine crackers, you can substitute with graham crackers or another type of plain cracker.
The dessert can be made a day in advance. Store it covered in the refrigerator.
For a more intense blueberry flavor, consider adding a handful of fresh blueberries to the pie filling.
