Follow The Directions

01

Step
5 mins

Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch baking pan. (5 minutes)

02

Step
5 mins

In a bowl, gently mix the blackberries with cinnamon and lemon juice until evenly coated. Transfer the mixture to the prepared baking pan. (5 minutes)

03

Step
10 mins

In a separate bowl, whisk together 3/4 cup of sugar, flour, and baking powder. Gradually stir in the milk and melted butter until just combined. Carefully spoon this batter over the blackberry mixture, covering as much of the fruit as possible. (10 minutes)

04

Step
5 mins

In another bowl, combine the remaining 3/4 cup of sugar and cornstarch. Slowly pour in the boiling water, stirring continuously until the sugar and cornstarch are completely dissolved. Gently pour this mixture over the batter and berry layer. (5 minutes)

05

Step
50 mins

Bake in the preheated oven until a toothpick inserted into the center comes out clean, approximately 45 to 50 minutes. Let it cool slightly before serving.

For an extra layer of flavor, consider adding a pinch of nutmeg to the blackberry mixture.
If you don't have fresh blackberries, frozen ones can be used. Do not thaw them before mixing.
The pudding layer will be quite liquid when it goes into the oven, but it will thicken as it bakes.
Feel free to experiment with other berries like raspberries or mixed berries.
Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream for the ultimate indulgence!
