Follow The Directions

01

Step

Prepare the Marinara: In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant (approx. 2 minutes). Add crushed tomatoes, chicken broth, red wine, garlic powder, onion powder, oregano, Italian seasoning, red pepper flakes, and sugar. Season with salt and pepper. Simmer on low heat, stirring occasionally, until thickened (approx. 15 minutes). Keep warm.

02

Step

Cook the Rigatoni: While the sauce simmers, bring a large pot of salted water to a boil. Add rigatoni and cook until al dente (approx. 13 minutes). Drain and set aside to keep warm.

03

Step

Prepare for Baking: Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper.

04

Step

Set up Breading Station: In three separate bowls, prepare the breading. Bowl 1: Flour, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, and pepper. Bowl 2: Whisked eggs and milk. Bowl 3: Bread crumbs, Parmesan cheese, oregano, Italian seasoning, 1/2 teaspoon garlic powder, and 1/4 teaspoon salt.

05

Step

Bread the Chicken: Place chicken breasts in a plastic bag and flatten to 1/4 inch thickness. Dredge each breast in flour, dip in egg, and coat with bread crumb mixture. Place breaded chicken on a plate.

06

Step

Pan-Fry the Chicken: In a large cast iron skillet, heat oil over medium-high heat. Fry chicken in batches until golden brown (approx. 1-2 minutes per side). Transfer chicken to the prepared baking sheet.

07

Step

Bake the Chicken Parmesan: Sprinkle mozzarella and Parmesan over chicken. Bake until chicken reaches 165°F (74°C) and cheese is melted (approx. 5 minutes).

08

Step

Serve: Toss basil into the marinara sauce. Plate rigatoni, ladle sauce over pasta, and top with the baked chicken Parmesan.

For an extra layer of flavor, try adding a splash of balsamic vinegar to the marinara sauce during the last few minutes of simmering.
Ensure the oil is hot enough before frying the chicken to achieve a crispy crust without overcooking the chicken.
If you don't have rigatoni, penne or spaghetti are great substitutes.
For a richer flavor, use freshly grated Parmesan cheese.
