Approximately 25 minutes before serving, melt the butter in a saucepan over medium heat. Add the remaining 1 small chopped onion and cook, stirring occasionally, until translucent, about 5 minutes. Stir in the rice, ensuring it's coated in the butter and onion mixture, then pour in the beef consommé. Bring the mixture to a boil, then reduce the heat to low, cover the saucepan, and simmer until the rice is tender and all the liquid has been absorbed, about 15 minutes. Let the rice stand, covered, for 5 minutes before fluffing with a fork. (Cook time: 25 minutes)
