Follow The Directions

01

Step

Preheat the oven to 350 degrees F (175 degrees C). (5 minutes)

02

Step

Using a sharp knife, make three diagonal slashes across each side of the fish. This prevents the fish from curling during cooking and allows the flavors to penetrate deeply. Place the fish in a shallow baking dish or roasting pan. (5 minutes)

03

Step

Generously cover each side of the snapper with grated fresh ginger, followed by chopped green onions and diced tomatoes. Season evenly with sea salt. (5 minutes)

04

Step

Slice half of the lime and arrange the slices artfully on top of the fish. Drizzle with soy sauce and squeeze the juice from the remaining lime half over the fish. Cut the lemon in half and place the lemon halves in the pan alongside the snapper. (5 minutes)

05

Step

Cover the entire dish tightly with aluminum foil. (2 minutes)

06

Step

Bake the fish until the flesh is opaque and flakes easily with a fork, approximately 20 minutes. (20 minutes)

07

Step

Before serving, squeeze the baked lemon halves over the fish to add a final burst of citrus flavor. To serve, gently lift the top fillet off the bone, then carefully remove the backbone, using your knife to separate the flesh from the bones. This method is much easier than flipping the entire fish. (5 minutes)

For a more intense ginger flavor, allow the fish to marinate with the ginger, green onions, tomatoes, soy sauce, and lime juice for at least 30 minutes before baking.
Feel free to add other vegetables to the pan, such as sliced bell peppers or zucchini, for a more complete meal.
If you don't have fresh ginger, you can use 1.5 tablespoons of ground ginger, but the flavor will be less vibrant.
Ensure the snapper is fully scaled before cooking to avoid any unpleasant textures.

I like to broil the fish for the last couple of minutes to get the top slightly crispy.
