StepPreheat oven to 400 degrees F (200 degrees C). Peel potatoes (if desired) and place in a large sauce pot, covering with cold water by 1 inch. Bring to a boil, then reduce to a simmer and cook for 30-35 minutes, or until potatoes are tender-soft.

StepMeanwhile, in a skillet over medium-high heat, melt 2 tablespoons of butter. Cook the diced onion for 10-12 minutes, or until softened and translucent.

Fill the mold with the potato mixture until the top is slightly rounded, then top again with bread crumbs. Carefully remove the ring and repeat with the remaining potato mixture, spacing the cakes about 1 inch apart on the prepared baking sheet.
