Follow The Directions

01

Step

Prepare the Grill: Preheat your outdoor grill to medium-high heat (about 375°F or 190°C). (5 minutes)

02

Step

Assemble the Packets: Place a 12x12-inch sheet of heavy-duty aluminum foil on a flat surface. In the center, spoon the brown sugar and dot with the softened butter. Arrange the pineapple ring over the sugar-butter mixture. Place the maraschino cherry in the center of the pineapple ring. Top with the shortcake shell, inverted. (10 minutes)

03

Step

Seal the Packets: Carefully fold the foil around the cake to form a sealed packet, ensuring there are no openings for steam to escape. Crimp the edges tightly to create a secure enclosure. (5 minutes)

04

Step

Grill the Packets: Place the foil packet, sugar-side down, directly on the preheated grill grates. (1 minute)

05

Step

Grill and Caramelize: Grill for approximately 10-12 minutes, or until the sugar is fully caramelized and the shortcake shell is heated through and lightly toasted. The foil packet will puff up slightly. (12 minutes)

06

Step

Serve: Carefully remove the packet from the grill using tongs. Let it cool for a minute or two before opening (be cautious of hot steam!). Invert the cake onto a serving plate. Serve immediately and enjoy the warm, caramelized goodness! (5 minutes)

For an extra layer of flavor, sprinkle a pinch of cinnamon or nutmeg over the brown sugar before grilling.
If using fresh pineapple, ensure the ring is not too thick to prevent uneven cooking.
Feel free to substitute the shortcake shell with pound cake or sponge cake.
Adding a splash of rum or pineapple juice to the brown sugar mixture will enhance the tropical flavors.
