For a deeper cinnamon flavor, use cinnamon-flavored applesauce in place of some of the fresh apples. If the streusel topping starts to brown too quickly, tent the pie loosely with aluminum foil during the last 15 minutes of baking. The vanilla sauce can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat gently before serving.
