Follow The Directions

01

Step

Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch square baking pan. (5 minutes)

02

Step

In a large bowl, combine the flour, oats, granulated sugar, and brown sugar. Cut in the softened butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs. (10 minutes)

03

Step

Reserve 3/4 cup of the crumb mixture. Press the remaining mixture firmly into the bottom of the prepared pan. Spread the apple jelly evenly over the crust. (5 minutes)

04

Step

In a separate bowl, combine the reserved crumb mixture with the chopped cashews. Sprinkle evenly over the apple jelly layer. Scatter the butterscotch chips over the cashew crumble. (5 minutes)

05

Step

Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the butterscotch chips are melted and slightly gooey. (35 minutes)

06

Step

Let cool completely in the pan before cutting into bars. (60 minutes)

For a richer flavor, use brown butter in the crust. Simply melt the butter in a saucepan over medium heat until it turns golden brown and smells nutty. Let it cool slightly before adding it to the flour mixture.
Toast the cashews for a more intense flavor. Spread them on a baking sheet and bake at 350 degrees F (175 degrees C) for 5-7 minutes, or until lightly golden and fragrant.
If you don't have self-rising flour, you can make your own by combining 1 cup all-purpose flour with 1 1/2 teaspoons baking powder and 1/4 teaspoon salt.
