Follow The Directions

01

Step

In a clean, dry small bowl, beat the egg white until foamy. Gradually add the confectioners' sugar, beating continuously until stiff, glossy peaks form. Set aside. (5 minutes)

02

Step

In a large bowl, whip the chilled heavy cream until soft peaks form. Be careful not to overwhip. (3-5 minutes)

03

Step

Gently fold in the sherry or Marsala wine, almond extract, almond macaroon crumbs, ground almonds, and the chopped red and green maraschino cherries into the whipped cream until just combined. (3 minutes)

04

Step

Carefully fold the beaten egg white into the cream mixture, ensuring not to deflate the cream. (2 minutes)

05

Step

Spoon the mixture evenly into 8 paper baking cups placed in a standard muffin tray. (5 minutes)

06

Step

Sprinkle the tops with slivered almonds. (2 minutes)

07

Step

Cover the muffin tray tightly with clear plastic wrap, then wrap with aluminum foil to prevent freezer burn. Freeze overnight or for at least 6 hours. (6+ hours)

08

Step

To serve, remove the tortoni from the freezer and let them sit at room temperature for about 5 minutes to soften slightly. Garnish each with a maraschino cherry half before serving. (5 minutes)

For an even richer flavor, toast the ground almonds lightly in a dry skillet before adding them to the mixture.
If you don't have almond macaroons, you can substitute with amaretti cookies.
Feel free to experiment with different extracts, such as vanilla or amaretto, to customize the flavor.
These tortoni can be stored in the freezer for up to 2 months.
