In a saucepan, combine lentils and wheat germ with enough water to cover. Bring to a boil, then reduce heat to low and simmer until lentils are tender, about 20-25 minutes. Add more water as needed to prevent sticking. Remove from heat and let cool slightly. Mash the lentil mixture until it reaches a thick, lumpy consistency.

Transfer the mashed lentil mixture to a mixing bowl. Add the diced onion, green bell pepper, mozzarella cheese, beaten egg, green chile pepper, minced garlic, salt, and pepper. Mix thoroughly until all ingredients are well combined. Shape the mixture into 8 evenly sized patties.

Heat approximately 2 tablespoons of vegetable oil in a large skillet over high heat. Once the oil is hot, reduce the heat to medium-high. Cook 4 patties in the hot oil for about 3 minutes per side, until golden brown and heated through. Repeat with the remaining oil and patties.

For a vegan option, replace the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit for 5 minutes to thicken).
Feel free to experiment with different cheeses or add spices like cumin or chili powder for extra flavor.
These burgers can be served on buns with your favorite toppings, such as tomato slices, lettuce, onion, avocado, and ketchup. They're also delicious served over a salad or alongside roasted vegetables.
