For a richer flavor, sauté the onion in a tablespoon of olive oil until softened before adding it to the baking dish.
Feel free to experiment with different types of cheese, such as Monterey Jack or Gruyere.
If you don't have a lid for your baking dish, aluminum foil works perfectly.
Add a pinch of red pepper flakes for a touch of heat.
