Follow The Directions

Step

Heat about 3 inches of vegetable oil in a deep saucepan to 375 degrees F (190 degrees C). (Approx. 5-7 minutes)

In a large bowl, dissolve yeast in 1/2 cup warm water. Let stand until foamy, about 10 minutes.

Stir the remaining 1/2 cup water into the yeast mixture. Gradually add flour, beating vigorously until a soft, slightly sticky dough forms. (Approx. 3-5 minutes)

Turn the dough out onto a lightly floured surface and knead with greased hands until smooth and elastic. (Approx. 5-7 minutes)

Place dough in a greased bowl, turning to coat the surface. Cover with a damp cloth and let rise in a warm place until doubled in bulk, about 1 to 1 ½ hours.

Gently punch down the dough and shape into golf ball-sized pieces.

Carefully drop the dough balls into the hot oil, frying in batches until golden brown and cooked through. (Approx. 2-3 minutes per batch)

Remove zeppoli with a slotted spoon and drain on paper towels.

Sprinkle generously with confectioners' sugar and serve immediately while still warm.

For a richer flavor, try adding a teaspoon of vanilla extract or a pinch of lemon zest to the dough.
Ensure the oil temperature remains consistent for even cooking. Use a thermometer to monitor the temperature.
Zeppoli are best enjoyed fresh. Reheating is not recommended as they tend to lose their airy texture.
Experiment with different toppings such as cinnamon sugar, chocolate sauce, or a dusting of cocoa powder.
