In a large pot, combine the whole chicken, diced tomatoes with habanero peppers, diced green bell pepper, diced onion, seeded and diced jalapeno chile peppers, and 1 packet of taco seasoning. Add enough water to just cover the chicken. (5 minutes)

Bring the mixture to a boil, then reduce the heat to low. Simmer until the chicken is cooked through and no longer pink inside, about 1 1/2 hours. Ensure an instant-read thermometer inserted into the thickest part of the thigh, near the bone, registers 165 degrees F (74 degrees C). (90 minutes)

Remove the chicken from the pot and allow it to cool slightly. Once cool enough to handle, shred the chicken meat from the bones and cut into bite-sized pieces; discard the carcass. Pour off approximately half of the liquid from the pot, being careful to retain all the vegetables. Return the shredded chicken to the pot and add the remaining 1 packet of taco seasoning. Simmer until the flavors meld together harmoniously, about 10 minutes. (20 minutes)

Heat canola oil in a large skillet over medium heat. Working in batches, fry the flour tortillas in the hot oil until they reach your desired level of crispness, approximately 1 to 2 minutes per side. (15 minutes)

Spoon the flavorful chicken mixture into each warm tortilla. Serve immediately with your favorite accompaniments such as beans, chopped tomatoes, shredded lettuce, sour cream, salsa, and cheese.

For an even deeper flavor, consider searing the chicken in the pot before adding the other ingredients.
Adjust the amount of jalapenos to control the heat level of the burritos.
For a healthier option, bake the tortillas instead of frying them.
Try adding a squeeze of lime juice to the chicken mixture for a zesty twist.
