While potatoes are drying, gently heat the evaporated skim milk in a separate saucepan over medium-low heat. (5 minutes)

Add the heated milk to the potatoes and beat with an electric mixer until smooth and creamy. Stir in the roasted shallot mixture and beat again briefly to combine. Season to taste with additional salt and pepper if needed. Serve immediately.

For an even richer flavor, try using whole milk or half-and-half instead of evaporated skim milk.
Add a tablespoon of butter or cream cheese to the potatoes along with the milk for extra decadence.
Roasting the shallots brings out their sweetness. Don't skip this step!
If you don't have fresh thyme, you can substitute 1 teaspoon of dried thyme.
Feel free to use other herbs such as rosemary or sage in place of thyme.
