Follow The Directions

01

Step

Pat chicken thighs dry with paper towels; sprinkle with salt and pepper. Heat oil in a very large skillet over medium heat. (2 minutes)

02

Step

Add chicken thighs; cook, turning halfway through, until browned, about 8 minutes. Remove from skillet and keep warm.

03

Step

Add garlic and wine to skillet, then use a wooden spoon to scrape up any browned bits from bottom of pot. (1 minute)

04

Step

Cook, stirring, until liquid is reduced by half, about 2 minutes. In a small bowl, whisk together chicken stock and cornstarch.

05

Step

Add stock mixture to skillet; bring to a boil. Reduce heat to low and simmer for 1 minute.

06

Step

Add chicken and lemon juice to the skillet. Cook, covered, 4 minutes.

07

Step

Add carrots and cook, covered, until carrots are tender and an instant-read thermometer inserted into thickest part of chicken registers 165 degrees F (74 degrees C), about 3 minutes.

08

Step

Gently stir capers and butter into sauce. Serve chicken and carrots with pan sauce and garnish with Parmesan.

For an even richer flavor, try using bone-in, skin-on chicken thighs. Just increase the cooking time accordingly.
Don't overcrowd the pan when browning the chicken – work in batches if necessary to ensure proper browning.
A splash of heavy cream at the end adds a luxurious touch to the sauce.
Serve over creamy polenta or mashed potatoes to soak up all that delicious sauce.

The sauce is incredible! I used Riesling because that's what I had on hand, and it worked perfectly. Will definitely make again.

This recipe is a lifesaver! Quick, easy, and the whole family loved it. I added a pinch of red pepper flakes for a little kick.
